Ingredients:
- 6 large eggs
- 1 cup chopped kimchi (drain if very juicy)
- 1 small onion, thinly sliced
- ½ cup shredded cheese (cheddar or mozzarella work well)
- 1 tablespoon gochujang (Korean chili paste) or 1 teaspoon chili flakes (optional, for extra spice)
- 2 tablespoons cooking oil (sesame oil for an extra kick)
- 1 green onion, chopped (for garnish)
- Salt and pepper to taste
Instructions:
- Preheat and Prepare:
- Preheat your oven to 375°F (190°C).
- Whisk the eggs in a bowl with salt, pepper, and gochujang (if using).
- Sauté Vegetables:
- Heat the oil in an oven-safe skillet over medium heat.
- Add the onion and cook until softened, about 3–4 minutes.
- Stir in the kimchi and cook for another 2–3 minutes until heated through and fragrant.
- Combine Ingredients:
- Pour the whisked eggs over the sautéed kimchi and onion, gently stirring to distribute the ingredients evenly.
- Sprinkle the shredded cheese over the top.
- Cook and Bake:
- Cook on the stovetop for 2–3 minutes until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for 8–10 minutes, or until the frittata is fully set and golden on top.
- Garnish and Serve:
Garnish with chopped green onion and a drizzle of sesame oil
Remove from the oven and let cool slightly.
